what i eat

What I have been eating recently in no particular order…

the loaded cesar

ingredients

  • Leafy green of your choice (I like spring mix and romaine mixed together)
  • Quinoa or rice
  • Garbanzo beans
  • Baked tofu (recipe below)
  • My cesar hummus dressing (recipe on sauces page)

optional additions

  • avocado
  • roasted Brussel sprouts
  • diced tomato
  • grilled onion

combination steps for ideal salad

  1. mix greens and dressing well
  2. heat up beans, grain, and tofu
  3. add heated beans, grain, and tofu to top of mixed greens
  4. Sprinkle nutritional yeast on top 🙂

What it can look like if you switch some ingredients up– add sweet potato and brussels!! Also switch romaine for mixed greens

baked tofu

ingredients

  • 1 block extra firm tofu
  • a few tablespoons tamari/soy sauce
  • dash of salt
  • dash of nutritional yeast
  • a few tablespoons corn starch
  • plastic bag

steps

  1. preheat oven to 400 degrees
  2. drain tofu, cut into small blocks
  3. add tamari, a dash of salt, and nutritional yeast into a bowl, mix together
  4. soak tofu in sauce for a few minutes
  5. add corn starch to a plastic bag, toss tofu inside and coat well
  6. spread tofu out evenly on a baking sheet
  7. drizzle extra sauce over tofu cubes evenly
  8. bake for 15 minutes, flip tofu over with a spatula, and bake for 15 more minutes

broc bowl

ingredients

  • rice/quinoa
  • black beans
  • either sautéed broccoli or microwave some frozen broccoli florets
  • microwaved frozen peas
  • cashew cream (recipe in sauces)

optional adds

  • tamari/soy
  • sriracha
  • lemon juice
  • hummus
  • more veggies!!
    • sautéed red pepper
    • sautéed brussel sprouts
    • sautéed green beans
  • avocado

sambar soup

This is perfect when you want something with a lot of flavor, but have no interest in making food. I order this stuff off Amazon in bulk

the best way to eat it

  • heat as much as you want up in the microwave
  • add in garbanzo beans if you want it to fill you up a little more
  • dip tortilla chips, roti, or rice cakes!!

another bowl

This is just one way to make a bowl, you can add any other veggies, sauces, or greens to get the same effect. I am just going to post all the shit I make like this so you don’t get bored. Check out my “bowl basics” page for more ideas/guidance.

ingredients

  • kidney beans
  • spring mix or romaine
  • hummus
  • brussel sprouts
  • mashed or roasted potatoes

instructions

  1. toss brussel sprouts in a mix of olive oil, garlic powder, salt, and pepper, then bake at 425 for 15-20 mins
  2. boil some potatoes until soft, smash with a fork, then mix in vegan butter, olive oil, garlic powder, salt, and pepper
  3. toss mixed greens in Bragg’s vinaigrette
  4. mix together!

amy’s vegan frozen pizza

I’m going to be completely honest with you guys. Eating this pizza made me feel like shit, but its SO good. I would say keep one or two in your freezer for when you’re drunk or have friends over.

After baking it, I usually sprinkle extra salt on top or dip in olive oil.

morning star chicken nugs

I meannn… do I have to explain this one? These are the best vegan nuggets. Dip them in literally anything, they’re amazing. My non-vegan friends and siblings love them just as much as I do!

You know when you would rather die than even wait for rice to cook? Yeah, same.

I literally heated up all of the ingredients in the microwave and added the random toppings I happened to have in my fridge.
